Brunch Specialty: Frittata Squares

IMG_2082This weekend I held my first brunch at our new house!  Brunch is one of my favorite meals to host and also the easiest for me to prepare.  My standard brunch menu consists of fruit salad, muffins, bagels (with lox, cream cheese, tomatoes, onions and capers), a bar area with juice, coffee and champagne plus my crowd-pleasing Artichoke Heart + Zucchini Frittata Squares!

IMG_2084(1)This was my first time baking in the new kitchen and I was a little nervous about using our original Bewitched-style stove but it worked out fine!

bewitched stoveHere’s how I make it:

IMG_2016Start by sauteing 1 chopped onion and 1 clove of garlic in 2 tablespoons of juice from a 12 oz jar of marinated artichoke hearts then grate and add in 4 small zucchini and saute for about a minute.   Let the sauteed mixture sit while you mix the following in a bowl: 4 beaten eggs, 16 ounces of grated sharp cheddar, a little hot sauce, a pinch of oregano and 2 tablespoons of bread crumbs (gluten-free bread crumbs work just as well).  Chop up all of the artichoke hearts – without the remaining juice – and add to the bowl along with the sauteed mixture. Spoon it all into a greased 9 x 12 pan and smooth it out:

Put this into your preheated 350 degree Bewitched oven for 30 minutes

IMG_2068(1)Then take it out and let it cool for a bit, slice into squares and Voila!!

IMG_2096One of my goals for this summer is to do more casual entertaining and have friends and neighbors over at least once a week even if it’s only for coffee or after-dinner drinks.  I love spur-of-the-moment invites so I’m working on stocking my pantry and fridge with the essentials.  I’d love to hear your ideas!!
