On our last night in Puerto Vallarta we hosted a special ‘Chef’s Dinner’ at our villa and I loved watching the preparation of this lovely meal and sharing it with our friends. This was the only night that we didn’t go in to town for dinner and staying in felt like the perfect way to wind down and relax before packing…
Each course was a mini ‘work of art’ – starting out with a chicken tamale in a smoky mole sauce:
Next up was a jalapeno and corn soup – it was perfectly sweet with a spicy kick:
Our main course was a beautifully-presented snapper:
The highlight of the meal for me was this little chocolate-filled corn husk ‘boat’ served with banana ice cream:
Having this meal prepared for us in our ‘home’ on our last night in Puerto Vallarta was such a fun treat.
