Avocado toast is one of my all-time favorite comfort foods and what could be more comforting than the addition of Serrano ham and buffalo mozzarella? Here’s my tasty twist on classic avocado toast:
I like to start with a hearty, heavy loaf of seeded multi-grain bread. This one from Whole Foods is heavenly. First I slice it up and pop it in the toaster or the oven for a few minutes until it’s nice and crispy. Next up, I mash one large avocado (one is enough for 4 slices of toast) and sprinkle it with salt and pepper.
Once the bread is nice and toasty, I just spread on the avocado and top it with a couple of slices of buffalo mozzarella and finish up with a little pile of Serrano ham. This is such a quick and easy appetizer, meal or late-night snack.
